Ultra-processed foods are highly processed foods that typically contain added ingredients such as sugar, salt, fat, and artificial colors, flavors, or preservatives. They are classified based on the extent of processing, most commonly using the NOVA food classification framework proposed by Monteiro et al.
Ultra-processed foods are drawing increasing attention as evidence suggests that their consumption is associated with health outcomes. With their intake rising globally, it has become increasingly important to understand their health effects and to develop appropriate classification systems and policy responses.
We have launched an Ultra-Processed Food Working Group to foster discussion on this topic. As part of this effort, we are proposing a classification of foods commonly consumed in Korea and Asia, presented in the following Google spreadsheet.
We will begin by posting food classifications by food group, starting with grains. If there are specific foods or items you believe require discussion, please feel free to contact us .We welcome collaboration.
